Stuffed, Baked Potatoes

We discovered this recipe on Minerva for Stuffed Baked Potatoes. They were not only healthy but so delicious we've already had them twice this week (Actually, the more cheese the better)! Have you found anything here that has knocked your taste buds off their tracks? There's so much, I keep feeling I've missed something.
