Chicken Parmesan

Ingredients:
(Serves 4)

  • 1/2 cup dry, plain breadcrumbs
  • 4 (3-ounce) boneless, skinless chicken breasts, pounded to 1/4” thickness
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1-1/2 tablespoons olive oil
  • 1 cup low-sodium spaghetti sauce
  • 1/4 cup reduced-fat, shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese

Directions:

  1. Preheat oven to 400. Place breadcrumbs in shallow bowl. Dredge chicken in flour, dip in egg, then breadcrumbs. Saute chicken breasts, 2 at a time, in olive oil over medium low heat for 2 minutes on each side, until browned. Place chicken on baking sheet and bake at 400 for 10 minutes, until chicken reaches an internal temperature of 165 degrees.
  2. Remove from oven and top each piece with 1/4 cup sauce, 1 tablespoon mozzarella cheese, and 1/2 tablespoon parmesan. Return to oven for about 5 more minutes until cheese is melted and bubbly.
